Grandma's Fried Chicken recipe from Alabama.

2 cups milk
2 eggs
2 cups all-purpose flour
1 teaspoon salt or seasoned salt
1 tablespoon pepper
2 teaspoons paprika
Chicken pieces

Mix together the milk and eggs in one shallow, wide bowl.  In another
shallow, wide bowl or plastic bag, mix together the dry ingredients.  To
save calories, skin the chicken pieces.  To live dangerously, don't skin
them.  In an electric skillet, heat 1/3 inch regular cooking oil (Puritan,
Crisco, canola or such, not peanut or anything exotic) to 365 degrees.  If
you don't have an electric skillet, heat a skillet to 365 degrees on
stovetop.  If you don't have a thermometer, set stove eye to Medium High. 
However, an electric skillet is best!  Now, do not cut the chicken up on a
wooden cutting board.  Set the pieces on a plate and get two more clean
plates out.  Roll each chicken piece in the egg/milk mixture, then
immediately roll or shake each piece in the dry mixture.  Put the coated
pieces on one of the new, clean plates.  When oil is 365 degrees, 
place the chicken pieces in the oil and get some tongs.  DO NOT PIERCE ANY
PIECE OF CHICKEN WITH A FORK or you will be popped by flying boiling oil!!! 
Do not let any drop of water or chicken juice fall into the hot oil.  Wear
glasses just to be on the safe side.  Wear gloves if you so choose.  Cook
each piece of chicken eight minutes on each side.  Use tongs to turn and
remove chicken and place cooked pieces on a NEW CLEAN plate.  Do not let
anything touch the plates that the non-cooked chicken touched.  Take out
the trash with the chicken packaging immediately (It will begin to stink
right away.)  Clean cutting board with bleach mixture.  Clean plates that
held raw chicken with one of those anti-bacterial soaps.  Stick dish sponge
that you used in dishwasher or clean with bleach.  Do not stick a piece of
chicken with a fork while still in skillet to "see if it is done."  Remove
chicken piece from oil before you cut into it to see if it is done.  A
piece is done when there is no pink at the very center of it next to the
bone.
